Default Replacement for infinity pc351

Now that the Infiniti 351 center channel has been disconnected, what speaker should I match up with my 363 towers?

I reached out to Infinity and they suggested two way more expensive models: "For the center speakers based on website (www.infinityspeakers.com), what we offer is reference rc263 ($499.95 each) and reference rc252($349.95 each)."

When I mentioned how expensive they were they mentioned JBL Studio 225c

I was surprised they mentioned a JBL.

I often see my local Fry's put speakers on sale, would I be able to use Klipse?

Infinity and JBL are owned by the same parent company. Klipsch have horn loaded tweeters and tend to have a significantly different timbre. Personally I would stay away from mixing Klipsch into a pre-exisiting system but as always it all depends on how picky you are.
