The Sony XBR5 models have a RS232 port on the back. What exactly is it for? What exactly can be done with it?

The manual says: "This jack is for receiving the external control signal." What external control signal?

It is so devices can send data back and forth to each other. If you had a controller system, it would be used for things like turning the system on, automatically selecting inputs, starting the DVD player, etc. In a more sophisticated system, it might even drop the lights, close the curtains, etc.
So, your TV would be able to be connected to such a system via RS232
