If your plasma is 720p you wouldn't notice any difference since the resolution is the same. Most TVs only allow up to 720p for VGA, but HDMI/DVI connections will allow up to 1080p if the TV supports it. Also, most of us can't tell the difference between 720 and 1080 anyway unless the screen is huge.

The only audio from a DVI to HDMI connection is with an ATI video card that has a special adapter that passes through audio.
