What is HD?

I can only imagine how many times this topic has come up by the looks of this intimidating and massive forum. The problem is that I cant find what I am looking for in the little time I have to search. If this problem has been addressed, I would appreciate to be directed to the fix. Thank You.
Here is my strange problem. For now, I am only relying on the audio from my TV. I am using an up convert 'cheap o' Memorex DVD player with the HDMI out directly to the HDMI in on the back of my 26" RCA lcd HDTV. I have made all the necessary setting adjustments and for my taste am getting a great picture. I am an audio engineer by trade so it doesn't take much to impress me visually. My problem is with the audio function through the HDMI. I will hear the audio just fine in the following cases; during the animation of the DVD's root menu. (This is always true.) Here is where it gets tricky. If the DVD has the option of 2.1 in any language, I will have audio fine. If the only option is 5.1 audio in any language, I will not have any audio, however, if I select to hear the commentary (if it is available,) I will get audio. For the future I will be using the SPDIF out jack on my TV through my DTS receiver and everything should be fine, but why will my TV not play the 5.1 audio mixed to stereo? There is a setting in my player setup that asks me if I want to have a stereo or theatrical mix. Neither one seems to work though. I usually consider myself to be pretty tech savvy, I have to with my job. Maybe I just shut it down when I get home. Thanks in advance for the help. Trying to understand owners manuals for cheap stuff is like trying to ask my five year old what she did in school today. You are probably right but I wander why my TV does not have any digital inputs for audio other than what is happening in the HDMI or Coax? I expected either a SPDIF or the TOSLINK fiber optics. To add to the confusion, it does have a digital audio out (via SPDIF). What exactly is that outing (is that a word) if the only source of digital audio would be from either the HDMI or the Coax? And if you are using HDMI and want to incorporate a digital surround system, would I be right to assume that my TV should not be the middle device and that I would need a receiver with HDMI in and out between the device and TV? Another thing that is confusing me and I guess it is all in the decoding, but in my field of audio recording, the SPDIF, Sony Phillips Digital Interface carries a digital stereo (x2ch) signal up to 48khz, so I find it hard to understand how 5 or more channels can be sent through an interface that they still call SPDIF. I'm so sorry guys that I am such an idiot when it comes to video. Up until last year, I was still using an RF modulator to use my DVD player on my main TV. I will be leaving you guys alone if I can resolve this problem. By the way, when you say that my TV does not have a 5.1 processor, what do you mean? Are you talking about a decoder? Why am I able to hear the audio for the menu and commentary but not the audio for the movie? Also, are there different configurations of HDMI cables or are they all the same architecture? Does it have a built in QAM or ATSC tuner? If so, that is how the TV would be able to output digital audio. At least that's how it is on my TV. If I'm watching locals in HD via my antenna, I can send the digital audio out to my receiver via the optical out. DeadHead68
