Actually when I do mine, I make my secret bbq sauce. I lay the ribs down in foil pan then completely submerge them in the secrete sauce. I know it doesn't sound like they would be smoked. After a couple hours I stir the sauce and then add a can of beer and I run the temp up to 300 for about 10 minutes then let it drop back down to 150 degrees. I do this all day. Man they are so tender that when I pick them up they fall off the bone. They are so smokey that my house smells like smoke for two days after eating them.

Lol. My neighbors know when I'm smoking ribs. The last 3 hrs I will add some pork steaks. I'm pretty well lit after the cooking is done.
