I have a samsung lcd 48" 1080p hooked up to dish network. On fast moving images I see a lot of pixelation. I know that is an issue with lcd tv's. I have heard that switching the resolution coming in from 1080i to 720p would help. How do I switch that with the dish network box?

You bought a 1080p tv because you want to watch 1080 tv. You should not have to reduce your incoming resolution to achieve that goal. Your Tv isn't causing the pixelation, your dish signal is, it's too compressed.
Dish must have some type of signal boosters available to their subscribers, so call them and ask for boosters which will help your problem greatly. Satellite providers are known for the most compression of the signal.
If they can't fix it, you should consider cable, they provide a much better signal with FIOS providing the best, but any cable is better than sat. with compression.

What did you do? Trade in the Pioneer for the Samsung LCD.....?

Agreed, that is most likely the case.

Unless the cable run from the LNB to the receiver exceeds 200', there is little need to "boost" the signal.
More importantly, "boosting" or increasing the signal level, will do nothing to resolve the compression problem.
