We own a place in Apopka, Florida can I make that my receiver’s “Home” so I get the Network Channels in HD? Then when I’m in Maine use my Receiver, without Dish Network taking my LNB’s off my Dish in Maine? Or having to get a second receiver?

You can move your address back and forth between the two locations. Most locals are on spot beam so I would doubt you would see FLA in ME and vise versa.

I know people who have Dish with their RVs without a problem. My guess is like garys said if anything is being sent via spot beam (like local stations) you will probably not get them.
I'm not sure what Dish would think of this though. Since it's a different address they might want you to buy a second service for it. After all what would stop you (or any one else) from getting more than one receiver and letting the spare one "stay" and a neighbors house.

I have a cabin in Colorado and home in Texas. What happens when you take your receiver to a different location you must call in to change your address and zip code determines what locals you get. Can't get Texas locals in Colorado and vice versa.
i.e., when I arrive in Colorado, hook everything up before making the phone call, the Texas channels show on the guide, but they don't work.

Just set up your dish on the roof the same as the one you have in Maine, when you go to Fla., call Dish and change your service address.
Alternately, do the same set up and just move the receiver as needed and watch what you get.
