If I am re-cabling my home theatre with HDMI (where appropriate) ought I use the same guage cable throughout or would there be little difference if I uses a thinner one behind the wall? (2 wallplugs obviously)

You want to use the larger gauge for long runs (ussually in wall runs are the long ones)

I need a 10 foot HDMI cable to connect my HD DVD player to my HDTV. Both units have HDMI connectors.

Which cable do I need from Monoprice? Do I need the one with ferrite cores or a different one?

Ferrites are extra insurance, they are not needed but they may provide piece of mind. If the cost was not to much higher, I would go for the ferrites.
