I'm not sure what receiver I have, but I do know that the actual dish is the dish 1000. I noticed during the OU - Baylor game that it was broadcasting in HD, but I could not find it anywhere. I know that with local channels you can get an OTA antennae to pick them up in HD, but what can you do to get a channel like this in HD?

You can hope DISH makes the HD Regional Sports Networks (RSN's) available to subscribers soon. As of now DISH is not broadcasting these Networks in HD. They are "uplinked" but not available. There have been rumors since early fall that HD RSN's would be available "soon". I have also heard they will be on by the end of the year or maybe the first quarter of 2007 or who knows when.
