I know that HDMI supports audio up to 8 channels or something like that, but does HDMI BY DEFAULT support Dolby Digital 5.1 audio? Or is it plain digital stereo?
For instance, I'm looking at laptops at the moment, and lots of them has got HDMI output. Would I be able to play my movies with PROPER 5.1 sound through HDMI? (eg. not simulated like Dolby Pro Logic and things like that)

Your question is a little confusing. You have to remember, the cable will only pass through what is being sent by the device. If your laptop will "only" send say Dolby Pro Logic, that's what you will get. It's up to the origin device (laptop, satellite box, blu-ray player etc) and what the receiving device supports. If you run HDMI from a laptop to a receiver that can support only Dolby Digital, then you will only get Dolby Digital. IF you have a receiver that supports the newer HD audio (DTS Master Audio or Dolby TrueHD) then you should get that. Etc.
The cable itself has little to do defining the audio, it's just a pipeline. You pour water down a garden hose it isn't going to turn into gasoline at the other end, it's still water. I hope that makes sense.
