I went through this same thing when I was getting ready to hang my plasma. I would say the center of mine is pretty much at sitting eye level as well. I had to make sure I had room for my center channel and audio equipment underneath also. Check your mount. Both of the mounts I have allow for quite a bit of vertical adjustment after the wall plate is hung.
