Just to close this thread... thanks in part to some helpful suggestions on AV Forum and some helpful folk at Richer Sounds, I have fixed this issue.
The forum won't allow me to post the link to the thread, so my last post is pasted here for anyone having a similar problem:
Success! And here's how....
I took the Onkyo and the Blu-Ray back to Richer sounds, along with the cables I'd been using.
Plugged into a Sharp 32", everything worked fine. Bafffled, I asked the Richer sounds rep if I could take a couple of cables to try at home. Bugger me if the more expensive cable didn't work!
So the lesson to me and to all lesser mortals out there is... sniff ye not at the ridiculous premium charged for HDMI cables... apparently it does make a difference!
