What REALLY produces better video quality on 720p or 1080i? I realize that component can't do "upconverting" or anything, but assuming native resoultions up to 1080i, what really does a better job?

I own several sets of each cable type and haven't been able to visually see a difference, except for colors appearing a bit more "natural" on my Samsung plasma, but no discernable difference on my Vizio LCD, both sets with a native resolution of 720p. Using Verizon FIOS.
